The protagonist is the “Ollare” stone, an healthy cooking method that enhances flavours and fun; customers are presented with different options of meat, “Chianina” beef, chicken, angus and Argentinian, that can be cooked directly by them on their stone.
This is an ancient way of cooking recently rediscovered by modern cuisine and is based on two different kinds of stones, the first one is directly extracted in the quarries of Bormio whereas the second comes from Himalaya and is 100% made of rose-coloured salt.
Stones are pre-heated in an oven at 280° and then taken to the floor where meat can be placed on them. There is no need for condiments, however, this atypical grill cooking is accompanied with green pepper sauce, rosemary, balsamic vinegar and truffle cream.
